Temperature and fan speed respond well, the machine holds up for years, and the home-roasting community is full of SR800 users who will help you troubleshoot your first few batches.

The NESCO CR-04 gets you into home roasting for under $100. It's an air roaster with a smoke-reducing catalytic converter, handy if your kitchen ventilation isn't great. Less precise than the Fresh Roast and the batch size is small, but it's a real roaster that will tell you quickly whether home roasting is worth a bigger investment.

Buy the 5-pound bag once you've done a few exploratory smaller-batch roasts.

Kenya AA is one of the most demanding origins to roast; the difference between a well-executed roast and a sloppy one is unmistakable in the cup. When you're ready for that kind of honest feedback, Kenya delivers. The intense acidity and blackcurrant notes reward precision and disappear fast if you push into second crack.

Your beans are at 450°F when they come out of the roaster. Cool them fast or the residual heat keeps cooking them. This tray is sized for a full pound of beans, with mesh fine enough to hold chaff while letting heat escape. Set it on the counter with your range hood running and stir the beans for two minutes. You will use this every single roast: it's the most-used accessory in the kit.
